If you’re anything like me, sometimes getting dinner on the table is an Olympic event. We want to do the best for our families by providing nutritious AND delicious meals, right? But that can be easier said than done a lot of the time.
So today I’m sharing a list of 20 of my favorite healthy AND easy dinner recipes. There’s regular stove-top or oven recipes, casseroles, and slow cooker recipes (can we all just stop for a minute and give the crockpot a round of applause?!)

Spaghetti Squash Chow Mein (I added some chicken to this to kick it up a notch. I just threw 1 pound of boneless skinless chicken thighs in my smaller crockpot with 1/2 cup of GF soy sauce and cooked on high for about 3 hours, then shredded it and stirred it in at the end)
Paleo Chili (if you have picky-about-veggies eaters in your house, you could puree the veggies to where you couldn’t see them. same flavor and health benefits without the complaints!)
Holy Yum Chicken (I have also made this in the crockpot…just threw all the ingredients in there together. not exactly the same but still really (holy) yum!)
Paleo Southwest Meatloaf (yummmmm. yummmmm.)
Pizza Spaghetti Pie (a definite favorite! tastes bad for you, but it’s not! yes!)
Weeknight Beef Bourguignon (SOOO GOOD. Seriously. Make the gravy. I used juice from the crockpot to make it and it was amazing. I want to eat this forever. I served it over brown rice when I last made it).
Paleo Spaghetti Squash and Meatballs (this is STUPID EASY. and super delish)
Slow cooker Beef Roast and Carrots (one of my most successful roasts!)
